Miguel grew up in Jacksonville, FL. He began cooking at French fine dining restaurants. One of which was nominated for a James Beard Award. After three years spent learning at Orsay, Miguel left to intern at Michelin Star restaurants and travel the world to learn more about food, art, and cultures.
Miguel applies his Michelin level training and world travels to the exquisite dishes he creates. He is filled with passion, originality, and energy. His goal ultimately is to bring clients on a journey of delicious flavors and memories.
In his harmonious dishes, Miguel enjoys entwining his Puerto Rican heritage, French culinary training, and interests in Nordic cuisine. He intentionally focuses on the balance of flavors and perfect components processed at their peak. Miguel passionately strives to push the culinary boundaries to find his own personal definition of perfection.
